Red Pork Pozole

The Story Behind the Dish
Pozole has red, green and white regional versions in Mexico. Garnishes and meats vary; this is a red pork preparation.
Ingredients
- 800 g pork shoulder, in 4 cm cubes
- 800 g cooked hominy, drained
- 4 guajillo chiles; 2 ancho chiles, seeded
- 1 onion, halved; 4 garlic cloves
- 2 litres water; 2 bay leaves
- 1 tsp oregano; 1 tsp salt
- 200 g shredded cabbage; 6 sliced radishes; 2 limes
Instructions
- Put pork, half the onion, 2 garlic cloves, bay and water in a pot. Bring to a gentle simmer, skim foam and cook covered 75–90 minutes.
- Soak seeded chiles in hot water for 15 minutes. Blend with the remaining onion and garlic and 250 ml cooking broth; strain into the pot.
- Add hominy and oregano. Simmer 25–30 minutes until pork is very tender; salt to taste and remove bay leaves.
- Serve in deep bowls with cabbage, radishes and lime offered separately.

- Use cooked hominy, not dried corn, for the timing given here.

How to Serve It
Offer shredded cabbage, radish and lime separately so each diner finishes their bowl. Tostadas can accompany it, but are not included in the recipe quantities.
Variations & Substitutions
Green and white pozoles are distinct preparations. Omitting all the chiles changes the identity of this red version; name such an adaptation explicitly.
Canned hominy works after draining and rinsing. Dried pozolero corn needs a separate long preparation. Chicken can replace pork only with its own shorter cooking schedule and 74°C safety check.
Storage & Reheating
Refrigerate the broth, pork and hominy together within 2 hours at 4°C or below for up to 3 days. Store raw garnishes separately. Freeze the soup without garnishes for up to 2 months.
Bring to a boil, stir gently and check that pork pieces reach 74°C. Add water if the hominy has absorbed broth; garnish only after reheating.
